Egg and Chips

Made popular by soldiers in the first world war, this is a staple of every household. After all those so-called superior foreign dishes, this simple platter is refreshingly filling. The whole meal can be transformed by the addition of either ketchup or brown sauce for a greater taste sensation. It should consist of proper chips and an egg fried in oil or lard (but not olive oil).

The ultimate comfort food. Takes me back to my childhood when it was a cheap meal for Mum towards the end of the week when money was a bit tight. Crisp chips fried in suet dripping and lightly fried egg whose yolk had just been splashed with fat so it was white. No bright yellow yolk for me. I would eat all the white first and then dunk a chip in the yolk, and woe betide anyone who tried to dunk their chip in before me!
