The ultimate winter-time comfort food: creamy, fluffy mashed potatoes smothered in rich, dark gravy. With or without our favourite “bangers” or the good old-fashioned pie and peas combination, this is surely the King of pub cuisine. Easy to make in large quantities (and let’s face it, you do want large quantities) this simple fare is experiencing a renaissance on the culinary scene. New restaurants which specialise in mash and gravy are springing up all over the country – there’s sure to be one near you.

Tips on how to make the perfect mash abound but many questions still remain. What are the best potatoes to use? Should you add cheese, mustard, garlic or double cream? And most importantly, why does there always seem to be a lot less mash than the number of potatoes you started with, eh?

You most certainly CAN buy this dish in restaurants in countries other than England... in fact, it is a diet staple of Southerners in the US! Everything else 'n mash might be English icons, but this is not.
