Crisps, potato chips – call them what you will – come in a wide variety of flavours these days, from Thai chilli to garlic and coriander. In the sepia-tinted days before such cosmopolitanism, however, crisps ventured only very cautiously out of their unadorned ready-salted plainness into the brave new world of flavours. Cheese and onion was the first advance, much reproduced the world over, but the road then travelled by the British crisp is not one that the world has felt inclined to follow us along. The salt-and-vinegar crisp remains a bastion of domestic taste, much sought after by a small coterie of admiring foreign visitors whose home markets offer them only the slender fare of paprika flavour as an alternative to cheese. The essential salt-and-vinegar encounter is a matter of eye-watering sourness and stinging lips, a flavour so unapologetically assertive that it can make the accompanying pint of beer taste like tap water. It evokes of course the condiments with which fish and chips should be liberally sprinkled, and as such, is as defiantly iconic as the national dish itself.

When I spent a year in America I really missed salt and vinegar crisps. Other countries don't have the flavours we do, and if you've grown up with ours, all others taste bland.

Great, salt and vinegar crisps have already been nominated. To me, the flavour means England. When I visit your country I come back with as many bags of salt and vinegar crisps as possible. I miss them as soon as I have run out of them. Fortunately, lots of people know about my "addiction" and bring salt and vinegar crisps from England for me as often as possible....
