Victoria Sponge Cake

This has been a classic English cake for over a hundred years. The favourite of church hall teas, village fetes and W.I competions all over the land. It even appears in a supporting role on the big screen (check out "Calender Girls"). Many people remember it as the first cake they ever made (successfully or not)! It's firmly rooted in the national psyche and its jam-filled, sugar-scattered simplicity deserves iconic status.

Hhmmmm...yummmy. My mum makes a mean Victoria Sponge, but it can be a little bit too heavy and it lies on your stomach for a few hours after you've eaten it. But for the 30 seconds it takes to scoff it down. It's good. Really, really good. As a general rule, you can't beat cheap, shop bought Victoria Sponges that come in a packet.
